Back in the summer of 2016, we got 7,070 pounds of fresh nectarines from Peters Orchard in nearby Adams County. Dear Peter, a bracing sour with a sweet, overripe nectarine nose, is finally ready. #SplinterWonderland
Sir Peche, brewed with 2,100 pounds of overripe peaches, is here. Brettanomyces adds a touch of tropical fruit and funk, lactobacillus provides the pucker, and a spell on American oak brings it all home
Drop by the brewery for Impending Descent, an imperial stout with notes of cocoa, vanilla and raw cane sugar, and Flying Mouflan, a barleywine layered with salted caramel, pecan pie and rum raisin.
Wild Elf goes through a secondary fermentation in oak foeders alive with our house culture. We add tart Balaton cherries, and the microflora that hitchhikes in and adds layers of lemon and white peppercorn among the oak.
While the brewery is the center of our community, our ability to work with local farms, organizations, manufacturers and suppliers is integral to what we do.
